Easter Recap

Easter's meant to be a time when we take time to focus on rebirth and miracles. But growing up northern Minnesota, my memories of Easter aren't of sunny Easter egg hunts out on the rolling green hills, but of running through the sleet and snow out to the car and spending the ride to church shivering in a breezy spring dress.

This year's late Easter actually gave us Northerners a chance to get in on the whole spring nature of the holiday. Sure, the lake ice is still lingering on, but the ice is growing darker every day; open water must be close at hand. And although it did snow (AGAIN) on Saturday, yesterday dawned sunny and warm so Andy and I spent much his extra day off out in the yard, cleaning out the perennial beds, working the compost, and building cold frames for the deck. 

For whatever reason, I am quite frequently out of town for the Easter holiday. This year marked the first Easter Andy and I have celebrated together at home. Being home for the holiday afforded me a chance to make a batch of homemade hot cross buns. Mmmm, one of my favorites.

I also tried my hand at roasting a leg of lamb for yesterday evening's celebratory dinner. It tasted delicious, but I'm not ready to put "professional lamb roaster" on my resume just yet. It was  . . . very chewy.

We've taken advantage of the sunshine to poke around in the woods a bit lately.  There are lots of signs of new life out there:

Loons are back!
Some travel plans that were up in the air have been confirmed and that means I need to get my rear in gear to get all my ducks in a row this week. Come on motivation!

  1. How pretty! Hot cross buns are wonderful -- I completely forgot to make them this year. Lamb is always tricky.

    I roasted a chicken and read books -- I needed the break!

    Sometimes, it's just nice to be home.

  2. Sounds like you had a great day! Ours was good too. The weather in the cities was beautiful. The kids got us up early to see what the Easter Bunny brought. (This is probably the last year my 9 yr old believes.) Then dinner at my sister-in-law's house and sitting out on her deck. And a run early in the day without my winter hat!

  4. Really, more snow??? I'm coming to the end of my first year composting - and it is actually working. I had too much brown and not enough green - but I'm learning. We made hot cross buns as well - no currants as the girls don't like them. We took some to our traveling pals for our convoy to see Picasso on Friday. Sounds like you had a great Easter!

  7. Sounds like a pretty good weekend! Those hot cross buns look amazing. You should definitely add those to your resume :) Are you going to share with us where you're going on vacation or is it top secret?

  9. I've never tried cooking lamb - too intimidating. We had ham instead. Love your pictures as always. So glad to hear that you are starting to get some warm Spring weather.

  10. I have roasted a leg of lamb or two in my lifetime. And I agree- it is an art!!! Your hot crossed buns looking beautiful!!!

  12. Connecticut Easters are almost always rainy. So are Halloweens. My mom used to joke that each Holiday she had a little group of flashers, as relatives would ask to see our easter dresses/costumes, and we'd have to rip open our raincoats to show them, then close the coats again real fast to keep from freezing!

  14. I want one of those buns...yummy!!! And good for you for even trying to roast a leg of lamb...that's quite a feat. Sounds like you had a lovely Easter. Glad the weather (kind of) cooperated!
